Mandarano Balsamic Barrels

 Mandarano Balsamic of Modena – The legendary taste of Modena. 

A  "battery"  is a series of five barrels used in the aging of Balsamic Vinegar of Modena. Our Acetaia uses different wood essences for each barrel resulting in the final complexity of taste and aroma notes of our Balsamics. 


Cherry lends a  sweet note, Chestnut gives the vinegar its dark-rich color., Mulberry thickens the vinegar as it ages, Juniper enhances the  taste elements, and Oak gives it a distinct and memorable aroma.

A proprietary blend of eight varieties of grapes grown in the Modena area give our Balsamic its discernible and unique taste.  All grapes are grown insecticide free and sustainably farmed.  


The art, skill and science is in the timing and  blending of all the elements of the aging process.  
With over 120 years of trial, error, passion and commitment our Acetaia has mastered the art of bringing  out the rich, well-balanced, harmonious flavor of  the Balsamic.

 

Mandarano Balsamic Premium Aged Authentic
Mandarano Table - Aged 3 Years :  Aged in the same traditional manner, it is lite and fresh – wonderful flavor & aroma.  Mixes well with other flavors – doesn't overpower.  Perfect for adding to your favorite olive oil for dipping artisan bread, as a salad dressing, marinade or addition to sauces.


Mandarano Gold - Aged 10 Years:  Thick & dark from aging, it's robust, refined, finely balanced with a memorable aftertaste and aroma.  Truly extraordinary.  You use just a small amount to embellish the taste of almost any dish.

Mandarano Balsamic Glaze & Sauce - Aged 5 Years:  Full-bodied, rich in flavor with just the right amount of tart and sweetness – No acidic aftertaste, wonderful aged Balsamic aroma. Truly aged, it is naturally thick and rich in color.  Add a few drops or drizzle before serving.  It really does enhance the flavor, aroma and presentation of almost any dish.
